Prateek Sadhu is former executive chef and co-owner at Masque, Mumbai, one of Asia’s 50 Best Restaurants and awarded the best restaurant in India. Prateek uses his individual experiences — his Kashmiri roots, travels, and the innate internationalism that comes from his stints at top global restaurants — as the lens to look at more universal Indian culinary traditions.
Ivan Brehm is chef-owner of one Michelin-starred restaurant Nouri (established in 2017) and creative interdisciplinary space, Appetite (established in 2020). He is recognised for developing a system of thought — of which cooking is a part of — called Crossroads Thinking.
